Autumn finally arrives and it is BAKING TIME but you still want a good salad sometimes, right???
So here is the answer. APPLE HARVEST SALAD. Fresh salad greens with apples, cranberries, nuts and goat cheese. Holy cow! But I feel like the real magic is in the vinaigrette made with fresh apple cider. Oh autumn, I love thee!
It’s really pretty simple. Just mix together salad greens, chopped apples, walnuts, cranberries and goat cheese.
Check out the salad toppers above salad dressing in the grocery store….I found one that is a mix of dried cranberries and honeyed walnuts. Perfection!
Buy crumbled goat cheese, or just chop it up. It falls apart easily.
In a small bowl, whisk together all the vinaigrette ingredients. The warm rich flavor comes from the apple cider and the Dijon mustard. It is absolutely wonderful and truly tastes like autumn!
This is great served as a side with grilled chicken, or just on it’s own with bread.
It’s also a great LUNCH salad.
Apple Harvest Salad
Ingredients
- 8 cups mixed greens
- 2 apples of your choice, cut into chunks *I used Fuji
- ½ cup dried cranberries
- 1 cup walnuts or pecans, chopped
- 4 ounces goat cheese, crumbled
Apple Cider Dressing
- 2 Tbsp apple cider
- 1 Tbsp vinegar
- 1 Tbsp honey
- 2 tsp Dijon mustard
- ¼ cup olive oil
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- In large bowl mix together salad greens, apples, cranberries, walnuts and goat cheese.
- In small bowl mix together all ingredients for the vinaigrette.
- Pour over salad. Serve up and enjoy!
