How often do you crave something cold and delicious on those hot summer days.
Well, here you go! This is one of my favorites. I think I would be happy eating this every day!
Start by mixing the absolutely yummy, delicious dressing.

Cut up the veggies and noodles and mix with the prepared noodles.

It’s fun to check out specialty stores and see what you can find. See if there’s an H-Mart where you live!


Pour on the sauce and my-oh-my. it is just SO GOOD!
Now just top with the cilantro and peanuts and dig in!


Asian Noodle Salad
Just a little spicy with lots of veggies and noodles and chicken too! @mostdeliciouslife.com
Ingredients
- ¼ cup rice vinegar
- 3 Tbsp soy sauce
- 2 Tbsp vegetable oil
- 1 tsp fresh ginger **I like the ginger you can buy in a tube in the produce section
- 1 tsp` brown sugar
- ¼ tsp crushed red pepper
- ¼ tsp black pepper
- 1 clove garlic, minced **or 1 teaspoon bottled ginger
- 2 Tbsp peanut butter
- 2 tsp Japanese BBQ sauce **optional
- 6 ounces lo mein noodles, or something similar **chuka soba, or Japanese curly noodles are great but hard to find. They can be purchased online.
- 1 cup carrots, shredded or matchstick
- 1 cup fresh snow peas, diagonally sliced
- 2 cups chicken breast, cooked and shredded **Rotisserie chicken works great for this
- 1 cup English cucumber, peeled and diced **If using regular cucumbers, seed first
- 1 cup green onions, diagonally sliced in 1-inch pieces
Toppings
- 1 cup fresh cilantro, chopped
- 1 cup dry roasted peanuts, coarsely chopped
Instructions
- Mix first 9 ingredients in a bowl (everything up to the noodles.
- Cook noodles according to package directions. Drain and rinse.
- In large bowl, mix noodles, chicken, vegetables and dressing.
- Top with cilantro and peanuts.
