I have served some variation of chicken salad over the years…at parties, luncheons, wedding receptions and so on. It’s always a hit. Make lettuce wraps, sandwiches or serve with crackers.
After many years and many adjustments, HERE IT IS. The BEST.
I don’t know…it’s just the perfect mixture of chicken, apples, cranberries, celery, red onions, buttered pecans, fresh tarragon, garlic and so on. COULD ANYTHING TASTE BETTER?
Before you do anything else…melt the butter in a skillet and stir in the pecans. Cook and stir a few minutes and then set them aside.

Throw the chicken in a bowl, then mayo…….add the fresh tarragon and lemon juice.
Zest a lemon…add in garlic salt, the apples and celery.


More good stuff coming….
Add red onions, cranberries and those delicious buttered pecans.



Now just mix it all together!

Serve with lettuce, croissants or with crackers.

Best Chicken Salad EVER
Ingredients
- 1 ½ Tbsp butter
- 1 cup pecans, roughly chopped
- 4 cups cooked chicken, cut up **I use rotisserie chicken
- 1 cup mayonnaise
- 3 Tbsp fresh tarragon, chopped **Can substitute 1 Tbsp dried tarragon
- 1 Tbsp lemon juice
- ½-1 tsp fresh lemon zest
- ½ tsp garlic salt
- Granny Smith apple, chopped
- 1 cup celery, chopped
- 4 Tbsp red onion, diced
- ¾ cup dried cranberries, roughly chopped
- lettuce leaves
- croissants
Instructions
- Melt butter in skillet over medium heat. Add pecans and stir to coat in butter. Cook and stir occasionally for 4-5 minutes. Turn down heat if necessary to prevent burning. Remove from heat and set aside.
- Add all ingredients together in a bowl and mix well.
- Serve on lettuce leaves or on croissants.Also great with crackers.
