We love setting this protein packed snack out on a Saturday for lunch! It is also perfect for game night, movie night, when my teens have friends over or my girls are coming for a chat.
The best part is how fast and easy it is to make! Just drain and rinse the two beans. In a medium sized mixing bowl, add the beans and the corn.
Chop up some red onion and cilantro. I do about a 1/2 cup of cilantro, and 1/4 cup of red onion, but do as much or as little as you like! This whole recipe is “to taste”.
When all of that is combined then drizzle the dressing over and toss till it is all coated. Add 1/2 – 1 teaspoon of lime juice if you choose. I love to add in a packet of True Lime. I ALWAYS have this product on hand!
Next chop an avocado and gently fold it in.
Serve with tortilla chips.
Black Bean Salsa
Ingredients
- 1 can black beans drained and rinsed
- 1 can black eyed peas drained and rinsed
- 1 can shoepeg corn
- ¼ cup red onion, chopped or more to taste
- ½ cup cilantro, chopped
- ¼ cup Italian dressing
- 1 avocado, chopped
- 1 teaspoon lime juice, optional or 1 packet of True Lime
- Tortilla chips
Instructions
- In a medium sized mixing bowl toss together both beans, corn, onion and cilantro.
- Drizzle the dressing over the bean mix. Add the lime if you choose. Fold and stir till combined.
- Gently fold in the chopped avocado.
- Serve with tortilla chips.
