Breakfast Skillet is one of those great crossovers…..a fabulous breakfast that also makes a great dinner!


Just fry up some bacon….

Saute’ onion and green pepper in bacon fat…..

Mix in frozen hash browns, stir and cook ’til desired doneness. I like mine crunchy on the edges. Salt and pepper as you go.

Create wells with a spoon and crack eggs into indentations. Salt and pepper.

Turn down heat and cover until eggs are cooked.

Sprinkle with grated cheese and bacon bits, cover until cheese is melted.



Breakfast Skillet

A tasty breakfast that I serve for dinner!

  • 6-12 bacon strips go for more if you want!
  • 1 30 ounce frozen hashbrowns
  • 1 cup chopped green pepper
  • ½ cup onions
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 6-7 large eggs
  • 1 ½ cups grated cheddar cheese


  • Cut bacon strips into ½ inch pieces and cook in skillet until crispy.
  • Remove from pan and drain on paper towels.
  • Pour as much bacon grease as you desire into large skillet or an electric skillet.
  • Cook and stir green pepper and onions until softened.
  • Add hashbrowns and cook until crispy on edges. Salt and pepper.
  • Using a large spoon, make 6 wells in the hashbrowns.
  • Break each egg into the well.
  • Cover with a lid and allow eggs to cook until desired doneness.
  • Sprinkle with grated cheese and bacon bits. Cover until cheese is melted.
  • Salt and pepper to taste.
