I LOVE cheese. And burrata cheese is FABULOUS.
Burrata cheese is actually mozzarella cheese but with milky soft cheese in the middle. It is SO GOOD in a saucy pasta dish because just kind of oozes into the sauce.
I use thin spaghetti because I like the way it absorbs the sauce and cheese. But truly, use ANY pasta you want.
I have a basic marinara sauce that I included in the recipe but just use your favorite jarred sauce if you like.
You can use any ground meat for the sauce, or just skip the meat and make it VEGETARIAN!
Next add tomato sauce, paste and seasonings OR your favorite marinara sauce.
Let it all simmer for a bit while you prepare the zucchini and mushrooms.
Cook the squash and mushrooms to whatever doneness you like and stir them into the sauce.
Dish up the pasta and spoon on the sauce.
Now for the Grand Finale! The magic! Tear half of a burrata ball over each serving.
And I like to top it off with freshly grated parmesan because….cheese.
ENJOY!!!
