If you are not a cabbage lover (like me) then you will be so amazed at how good this is! It is rich and hearty and so tasty! Every time I make it (per my husband’s request) I am surprised by how good it is.
**This is delicious as a vegetarian dish…just leave out the meat.
Start by browning the ground turkey and then add the onions and carrots and sauté.


Add in the spices and sriracha. **Speaking of sriracha, adding 1/2 teaspoon is really not too spicy for most people and gives it a nice kick.

Pour into a baking dish and add in everything except for the cheese.



Mix it well and cover with foil,

Bake for 50-60 minutes, stirring halfway, and top with cheese.


Throw back in the oven and bake until the cheese is melted.

Cabbage and Rice Casserole
Ingredients
- 2 Tbsp olive oil, split
- 1 pound ground turkey **or ground beef ***OR meatless for vegetarian
- 1 medium onion, sliced thinly and cut into 2-3 inch pieces
- 1 cup shredded carrots
- 3 tsp creole or cajun seasoning mix
- ½-1 tsp sriracha sauce **optional
- 2 tsp salt
- ½ tsp black pepper
- 4 cups cabbage, thinly sliced and cut into3-4 inch pieces
- 1 8-ounce tomato sauce
- 1 15-ounce crushed tomatoes
- 2½ cups water
- 1 cup rice
- 2 cups cheese, grated – I used a cheddar/montery jack mix
Instructions
- Preheat oven to 350°.
- Heat 1 Tbsp olive oil in large skillet and brown turkey or beef until broken up and most of the pink is gone. **If you use ground beef and there are a lot of juices drain off.
- Add in another tablespoon of olive oil, onions and carrots. Cook and stir over medium-high heat until onions start to soften, about 5 minutes. *Add more oil if neccesary.
- Stir in seasoning, sriracha, salt and pepper.
- Pour meat and veggies into a 9×13 baking dish.
- Add cabbage, tomato sauce, crushed tomatoes, rice and water. Stir carefully until well mixed.
- Cover with foil and bake 50-60 minutes, stirring halfway through. Bake until cabbage is at desired doneness.
- Add cheese and return to oven uncovered. Bake for 10 more minutes until cheese is melted.
