There is soup and then there is SOUP! And this deserves capital letters! This is one of our TOP FAVORITES!

And if you want to take it up at notch, serve it in a sour dough bread bowl!

At the very least, serve it with sour dough bread…..something about the two together takes it into a whole other realm.



Chop up all your veggies.

In your favorite soup pot, saute veggies in butter until tender.

Stir in bisquick mixture to make roux.

Stir in chicken broth and heat until boiling and thickened.

Add half & half, stir until heated but don’t bring to a boil.

Add in cheese and stir until melted. *Do not allow soup to boil after adding half & half and cheese.

Salt and pepper to taste. 

And don’t forget the sour dough bread!

Cheddar Cheese Soup

This warm, hearty, cheesy soup will fill you with happiness!

  • cup diced carrots
  • 1 cup diced celery
  • ½ cup onion
  • ½ cup butter
  • 1 cup baking mix (Bisquick or Jiffy work well)
  • ½ teaspoon paprika
  • teaspoon black pepper
  • teaspoon cayenne pepper
  • 2 cartons chicken broth *or four cans
  • 2 cups sharp cheddar cheese grated
  • 2 cups half & half


  • In large pot, melt butter over med-hi heat and cook onions, celery and carrots until veggies are tender.
  • In small bowl, mix together baking mix and spices.
    Stir into veggie/butter mixture and continue cooking for 1 minute.
  • Remove from heat and whisk in chicken broth. Return to heat and whisk until mixture is smooth and comes to a boil. Continue boiling for 1 minute.
  • Reduce heat, add half & half and cheese. Stir until cheese is melted and remove from heat.
  • Salt and pepper to taste.
