This GLORIOUS dish (see what I did there?) is based on a Betty Crocker from back in the day and let me just say…it is AMAZING! Seriously SO GOOD! This is a recipe you should keep forever and always serve to your favorite guests.
Start by breading the chicken pieces in flour and then brown on both sides.


Then sauté mushrooms, onions and garlic in butter and spoon all that yumminess over the chicken in a baking dish.



Now make the creamy, yummy sauce by melting butter and whisking in flour to make a roux.


Add chicken broth and cook and stir until it begins to thicken.
Stir in the half and half and vinegar… stir and cook until heated through.


Pour all over the chicken and mushrooms.


Cover with the cheese slices and bake!

Bake for 25 minutes, remove the foil and then broil the cheese until bubbly.


Top with parsely and dish it up!

Chicken Gloria
Ingredients
- 3 large chicken breasts
- salt and pepper
- 1 cup flour
- 4 Tbsp butter, divided
- 1 Tbsp olive oil
- 1 medium onion, diced
- 2 tsp garlic, minced
- 8 ounces mushrooms, sliced
Sauce
- 3 Tbsp butter
- 3 Tbsp flour
- 1 tsp salt
- ¼ tsp pepper
- 1½ cups chicken broth
- 1 Tbsp red wine vinegar
- 1 cup half and half
- 8 ounces Muenster cheese, sliced
Instructions
- Preheat oven to 350°.
- Trim chicken of fat and sinews. Slice each breast in half lengthwise through thickest part of breast. Cut into serving size pieces.
- Generously salt and pepper both sides of chicken pieces.
- Heat 2T butter and olive oil in large skillet over medium-hi heat.
- Dip chicken pieces into flour and shake off excess. Place in the heated skillet. Lightly brown, 3-4 minutes each side.
- Place chicken in a 2 quart or 9×13" baking dish.
- Melt remaining 2T of butter in skillet. Add mushrooms, onions and garlic. Cook for about 5 minutes, stirring occasionally.
- Spoon mushroom mixture over chicken.
Sauce
- In the same skillet, melt butter over medium-hi heat. Whisk in flour, salt and pepper and cook for 1 minute while continuing to stir.
- Whisk in chicken broth and red wine vinegar. Cook and stir until it begins to bubble and thicken.
- Stir in half and half. Cook and stir until heated through. Add more salt and pepper if needed.
- Pour sauce over chicken and mushrooms. Cover chicken with sliced muenster cheese.
- Cover with foil and bake for 25 minutes.
- Change oven to broil. Remove foil and place baking dish under burner until cheese starts to bubble. Watch carefully so that it doesn't burn.
- Allow to sit 5 minutes before serving.
I made exactly as written except I used chicken thighs and it was amazing !! Thank you for posting this recipe , it is definitely going in the rotation! Hubs LOVED it!

What a delicious dinner! It is a bit of work but so worth it. The red wine vinegar gave it a real rich flavor like actual white wine was used.

We have hundreds of recipes without mushrooms. Also, we LOVE mushrooms, so if we put them in a recipe that doesn’t mean that you have to. You can totally make this recipe with no mushrooms. I personally think it’s way better with them, but to each their own.

BTW there are plenty of recipes here on this site that do not use mushrooms. Just scroll through the entire site or search the site for any dish you may be interested in.
Would it work to prep ahead, chill and bake the next day?
Yes, add 5-10 minutes onto the bake time, and do not put a super cold baking dish straight into a hot oven.
I hate the taste of vinegar. Can you taste it in the recipe? Is there a substitute?
It is not noticeable at all, but you could replace it with white wine if you like.
