Dinner time or party food…this works for either. It can be served as a warm, hearty casserole or as a fabulous party dip. Either way it is SO GOOD!

I like to use rotisserie chicken and just shred and cut it up. Or use any leftover cooked chicken. I chop it up fairly small to make for easy scooping.

Add in salsa, tomatoes, black beans, corn and all the spices and mix it all together.

In a separate bowl mix the refried beans with salsa.

Now layer half the chicken/veggie mixture, refried beans, cheese…then remaining chicken/veggies and top with remaining cheese. Stick tortilla chips around the edges and throw it in the oven.

Throw it in the oven and bake.

Spoon over tortilla chips or just dip in! Top with taco sauce, avocados, sour cream and cilantro.

Chicken Nacho Casserole

Ingredients
  

  • 3 cups diced rotisserie chicken ***or just cooked chicken
  • 2 cups tomatoes, seeded and chopped ***about 4 romas
  • 1 15-oz can, black beans, drained and rinsed
  • 1 can corn kernels, drained
  • ¾ cup salsa or picante
  • 2 cloves garlic, pressed
  • 1 tsp chili powder
  • 1 tsp cumin
  • ¼-½ tsp cayenne
  • 1 tsp salt
  • 1 15-ounce refried beans
  • ½ cup salsa or picante
  • 3 cups cheddar or monterey jack cheese, shredded *or favorite cheese
  • tortilla chips

Toppings

  • avocados, choppped
  • cilantro
  • sour cream
  • taco sauce

Instructions
 

  • Preheat oven to 400°.
  • Mix chicken, tomatoes, black beans, corn, ¾ salsa, garlic and seasonings together.
  • Spoon half of the mixture into a 2 quart baking dish (or 9×13 inch pan).
  • Mix refried beans with ½ cup salsa. Drop by spoonfuls over chicken & veggies and spread carefully.
  • Top with half of the cheese.
  • Spoon on remaining chicken filling and top with remaining cheese.
  • Make a rim of chips around the edge of the baking dish with the chips sticking up.
  • Bake 30 minutes.
  • Serve with sour cream, taco sauce, chopped avocados and cilantro.
