This is based on the old Chicken Spaghetti Casserole from back in the day. It was made with cream of mushroom soup and baked in a casserole dish. I really wanted to update it and Corinne had this recipe from her friend Emilie and it’s PERFECT!

It’s so rich and creamy and a little bit spicy!

Traditionally it was always made with spaghetti noodles, but you could really use pretty much any kind of pasta.

Start by cooking the pasta al dente and SAVE THE PASTA WATER…it’s like magic sauce. If your pasta is too dry adding a little pasta water will make it moist and creamy.

Melt the butter with olive oil in a skillet. Whisk in the flour and saute the garlic.

Whisk in broth, cream, tomatoes, chicken bouillon and seasonings.

I used crushed tomatoes, and it made the sauce a little pinkish!

Simmer until thickened and add cheese.

Mix with the pasta and chicken. Stir to coat the pasta.

Garnish with fresh parsley and parmesan cheese.
