You have to trust me on this. These are SO GOOD. The lettuce makes them crunchy and the flour tortilla is crispy AND they are low-calorie and healthy!


Just mix together the chopped chicken, chopped lettuce and salsa.

**This is a great way to use leftover chicken or rotisserie chicken.


Spread the mixture on half of the tortilla and sprinkle with cheese.

Cook in a medium-high griddles sprayed with cooking spray until golden and crunchy on both sides.

Cut up and serve with salsa.



Chicken Quesadillas

These are HEALTHY and delicious!
Course Lunch, Main Course, Party Food
Servings 4 people


  • 3 10 inch flour tortillas
  • 2 cups cooked chicken
  • 3 cups iceberg lettuce
  • 1 cup salsa
  • cups cheese of your choice


  • Chop chicken into bite-size pieces.
  • Chop lettuce. Mix with chicken.
  • Stir in salsa.
  • Spread ⅓ of mixture on half of a tortilla.
  • Sprinkle with ½ cup shredded cheese.
  • Spray a large skillet with cooking spray and heat to medium high. Turn down heat if the quesadilla begins to burn.
  • Spray top of quesadilla with cooking spray and carefully turn over in pan. Cook both sides until golden brown and crispy.
  • Cut into wedges with pizza cutter. Serve with salsa.
