This has been a family favorite FOR YEARS. If you are craving cinnamon rolls but don’t have the time, these are THE TICKET!

I discovered this magical treat as a teenager and it’s been with me ever since.

As a wedding shower gift, somebody gave me this set of recipe cards with a recipe box, and all of my oldest recipes were copied down as a newlywed.

They are all stained and dog-eared and have clearly been used many times.

THEY ARE VERY EASY.

Whisk together the oil, eggs and milk.

Stir in all dry ingredients. I don’t even bother to mix them in a separate bowl, because sometimes I’m like that. I keep these fast and easy.

Here’s the important bit: DO NOT OVER MIX. I kinda fold the wet ingredients up over the dry over and over until all the dry ingredients are incorporated. The batter will look pretty lumpy.

Spray each muffin cup with cooking spray and evenly distribute batter.

As you can see, I am making MINI muffins. It allows for more butter and cinnamon/sugar per capita, a good thing indeed!

Bake about 18 minutes for mini, 20 minutes for regular.

After removing from oven, use a butter knife to slip around the sides of each muffin and lift them on their sides to cool.

Melt butter in microwave or stovetop. Mix sugar and cinnamon in separate bow.

When butter has cooled a bit, use forks (or your fingers!) to roll each muffin in butter and then cinnamon/sugar mixture.

Truly A TREAT.

Cinnamon Donut Holes (or mini muffins)

These are THE BOMB. A fast and easy alternative to cinnamon rolls.

Equipment

  • 1 muffin tin - 12 muffins OR 1 MINI muffin tin - 24 muffins

Ingredients
  

  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 ½ cup white flour
  • ½ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup butter
  • cup sugar
  • 3 teaspoons cinnamon

Instructions
 

  • Preheat oven to 350°.
  • In medium mixing bowl, beat egg.
  • Mix in milk and oil.
  • Add in dry ingredients, stir until flour is incorporated but batter still lumpy. *Do NOT over mix.
  • Spray muffin tins with cooking spray.
  • Divide batter evenly into 12 muffins (or 24 mini muffins)
  • Bake 20 minutes for regular muffins, 18 for mini.
  • Using a butter knife, slip around each muffin and lift out of tin to cool on its side.
  • Melt butter in microwave or on stovetop.
  • Mix sugar and cinnamon in small bowl.
  • When muffins are cool enough to handle, roll in butter and then in cinnamon sugar mixture.
