Orange + cranberry is one of my very favorite flavor combinations. The smell of this bread baking is HEAVENLY.
This bread feels very festive and is great to serve for almost any holiday, but I will tell you there have been many episodes of late-night-baking of this for no good reason at all.
It’s a very easy batter to whip together.
Just measure out all the dry ingredients into a mixing bowl. Then cut in the butter until crumbly.


Add in orange rind, orange juice and egg. Stir until just mixed.



Stir in cranberries and nuts and it’s all done!


Making this wonderful bread and then having it stick to the pan is THE WORST.
To make sure that doesn’t happen do this:
Place the loaf pan on parchment paper and trace the bottom with a pen and cut it out.
Place the cut out parchment in the bottom of the loaf pan and then spray the whole pan with cooking spray.


Spoon the batter into the pan. I often make two loaves at a time and make one with nuts and one without. I like to sprinkle extra nuts on the top so that I can tell them apart.

Throw the bread into the preheated oven to bake. I do my first check at 55 minutes by sticking a sharp knife into the center of the loaf to see if there is still raw batter in middle. Continue to bake checking every 5-10 minutes until done.


Remove the bread from the pan and cool on a cooling rack…cut in whenever you want!
Cranberry Orange Bread
Equipment
- 1 regular loaf pan **The size can vary, may need to adjust baking time.
Ingredients
- 2 cups flour
- ¾ cup sugar
- 1½ tsp baking powder
- ½ tsp salt
- ½ tsp baking soda
- ¼ cup butter, softened
- 1 Tbsp grated orange rind
- ¾ cup orange juice
- 1 egg
- 1 cup dried cranberries, roughly chopped
- ½ cup chopped pecans *optional
Instructions
- Preheat oven to 350°.
- Prepare loaf pan. Place bottom of pan on parchment paper and trace with a pen. Cut out and place on the inside of the loaf pan. Spray with cooking spray.
- Measure dry ingredients into a large bowl and mix together.
- Add softened butter. Mix into flour with fork until crumbly.
- Stir in grated orange rind, orange juice and egg until just mixed.
- Stir in cranberries and nuts.
- Spoon batter into prepared loaf pan and spread with spoon.
- Bake for 55-65 minutes. Stick into center of loaf with a sharp knife…if there is batter on the knife continue cooking until knife comes out clean.
- Use a butter knife to go around the edges of the loaf and turn out onto cooling rack.
