I think CRANBERRY-ORANGE might well be one of my favorite flavor combos. The actual cookies are the perfect texture and are delicious all on their own, but…the jam is everything!

Cranberry Orange Jam is pretty spectacular. Double it and keep some in the fridge…it’s great on toast…or hot biscuits! Buttermilk Biscuits – Most Delicious Life | Sharing Generations of Family and Fun

These cookies are both beautiful and delicious! It’s a delicious shortbread rolled up with cranberry-orange jam.

Start by whipping the butter and sugar until light and fluffy.

Add vanilla, eggs and fresh orange peel.

Mix in dry ingredients and wrap & chill dough. **Chilling is very important in this recipe in order to manage the dough.

In the meantime…make the jam.

Mix all ingredients together in a saucepan. Bring to a boil, reduce heat and simmer.

Cook until cranberries pop and jam thickens.

Roll out the dough but not too thick! Spread with jam…

Now is when to add those pecans if you want!

Carefully roll up, starting with a long edge. Lift the dough a little as you roll so that you don’t squeeze out the jam!

Place on a parchment-covered baking tray. Bake until the edges are lightly golden.

Cranberry Orange Pinwheels

Ingredients
  

  • 1 cup butter, room temp
  • cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 Tbsp grated orange peel
  • 3 cups flour
  • ½ tsp salt
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ½ cup chopped pecans

Cranberry Jam

  • 2 cups fresh cranberries, rinsed
  • ½ cup sugar
  • ½ cup water
  • ½ cup orange juice
  • 1 tsp grated orange peel
  • ½ tsp cinnamon

Instructions
 

  • In mixing bowl whip the butter and sugar until light and fluffy.
  • Add vanilla, eggs and orange peel. Mix well.
  • Mix in dry ingredients. Form dough into 2 balls. Flatten to about 2 inches and wrap in cling wrap. Refrigerate 1-2 hours.
  • Roll out dough on a lightly floured surface to about 10×14 inches. **Don't roll out too thin.
  • Spread about half of the cranberry jam leaving about ½ inch around the edges. **you may have some jam leftover.
  • Using a metal spatula or bench scraper, carefully lift one long edge to start rolling. Finish rolling while gently lifting over the jam so that you don't squeeze it all out!
    *Optional: sprinkle jam with pecans.
  • Wrap in cling wrap and refrigerate for 2 hours.
  • Preheat oven to 350°.
  • Cut rolls into ⅓-½ inch thick. Place slices on baking sheet covered with parchment paper.
  • Bake for 14-16 minutes until edges are lightly browned.

Cranberry Orange Jam

  • Place all ingredients in a saucepan. Stir and bring to a boil.
  • Reduce heat and simmer about 8 minutes, stirring occasionally until cranberries pop.
  • Cool. Store in refrigerator.
