Hot pudding cakes are such a great vintage dessert that truly takes me back to my grandma’s kitchen.

Here’s the thing: I worked on a recipe from scratch and then, on a whim, made it the way I did all the time when my kids were little.

And guess what? We all liked it better!

In fact everyone LOVED IT. So WIN/WIN.

Delicious AND easy!

 

Just grab a box of spice cake and you are on your way.

Stir in 1 tsp of ginger. Add milk and mix well.

The batter will be quite stiff. Spread in the bottom of your crockpot…you may need to use your fingers to get it spread evenly.

In a saucepan mix water, brown sugar and butter.

Heat to boiling, then turn down and simmer for 2 minutes.

Pour the hot mixture over the batter in the crockpot. Cover with the lid, turn to high and let cook for 2 hours.

Then remove the crock from the pot and sit on rack to cool. Remove lid and let cool for 30-45 minutes before serving.

Serve with whipped cream or ice cream.

Crockpot Gingerbread Pudding Cake

Full of spices and rich with flavor this is gooey on the inside caramelized on the outside. Comfort food dessert. @mostdeliciouslife.com

Ingredients
  

  • 1 15.25 oz Spice cake mix
  • 1 tsp ginger
  • ½ cup milk
  • ½ cup raisins **optional
  • cup water
  • ¾ cup brown sugar
  • ¾ cup butter

Instructions
 

  • Spray inside of crockpot with cooking spray.
  • Open cake mix and pour into a mixing bowl. Add ginger and mix.
  • Add milk and stir to combine. Mix in raisins if desired.
    **The batter will be quite stiff.
  • Place batter in crockpot and spread evenly. (Use fingers if needed).
  • In a saucepan heat the water, sugar and butter to boiling. Reduce heat to medium and simmer and stir for 2 minutes.
  • Pour over the batter in the crockpot.
  • Place lid on crockpot and turn heat to high.
    Cook for 2 hours.
  • Remove the crock from the pot and remove the lid. Let sit for 30-45 minutes before serving.
  • Serve with whipped cream and chopped pecans if desired.
