I love this Basmati rice with a hint of curry on the side of most main dishes that have Southeast Asian flavors. Think Indian and Thai food. So different, but this rice is equally good with Pork Satay and Chicken Tikka Masala.

I first made this up as a side dish to go with my Sesame Chili Chicken with Watermelon Salsa. The watermelon salsa has fresh grated ginger, and this curried rice goes PERFECT with it!

It is SUPER easy to get going and let the rice steam and cook while the main course is cooking.

Chop up a sweet onion, some mushrooms and a bell pepper. In a small pot, with a lid that fits, sauté the veggies in some olive oil.

Add in the rice, curry powder and salt.

Pour in the water and bring to a boil. Fit on the lid and turn the heat down to low. Simmer for 15-20 minutes.

Curried Basmati Rice

Equipment

Ingredients
  

  • 1 sweet onion finely chopped
  • 1 cup mushrooms chopped
  • 1 bell pepper Diced, any color, but I like the color red with this rice.
  • 1 Tbsp olive oil
  • 1 cup Basmati Rice
  • 1 Tbsp yellow Curry powder
  • ½ tsp Kosher salt
  • cups water

Instructions
 

  • Chop up and prep the onion, mushrooms and pepper according to the ingredients list.
    In a large saucepan or small pot, that has a lid to fit, heat oil. Add in the onions, mushrooms and diced pepper. Sauté for a couple minutes.
  • Add in the rice and continue to sauté for a minute or two to toast the rice.
    Add in the curry powder and salt as you sauté.
  • Pour in the water and bring to a boil. Fit the lid on and turn the heat down to low. Let the rice steam for 20 minutes.
  • Remove from heat and stir through to fluff up the rice.
