We take pie very seriously in our family. So last March when my son brought his new girlfriend to a family Pie Bake Off and she took First Prize, it caused quite a stir.

This championship pie took first prize over

some seriously gourmet entries.

She used her mom’s Fruit Pizza recipe that she loved as a kid and made it into pie form. And it is spectacular.

Katelyn’s mom died when she was a teenager and so many memories of her mom involved food. This is one of her favorites.

 

Two things I LOVE about this recipe:

FIRST: It’s EASY. Make the crust with premade sugar cookie dough. Trust me. This is a worthy cheat.

SECOND: The Citrus Syrup knocks it out of the park…shoots it into a new dimension.

 

So pick up some cookie dough and get started.

I used most of the dough but not all of it (probably left 4 cookies behind).

Press into the pie pan and bake.

Let the crust cool and whip together the cream cheese and cool whip.

Spread into the cooled pie crust…

Now the fun part! Decorate with your favorite fruit.

Make the syrup by whisking everything together (except the orange zest) over med-high heat until it comes to a boil and thickens.

Let it cool for a bit and then spoon it over the pie.

And there it is! BEAUTIFUL!

Fresh Fruit Pie

Equipment

  • 1 9 inch pie dish

Ingredients
  

  • 14-16 ounces sugar cookie dough
  • 8 ounces cream cheese, softened
  • 8 ounces Cool Whip *or any frozen whipped topping, thawed

Fruit Options

  • strawberries, rinsed and sliced
  • blueberries, rinsed
  • kiwi, peeled and sliced
  • berries, rinsed
  • bananas, sliced **dipped in lemon juice or preservative
  • peaches, peeled and sliced **dipped in lemon juice or preservative
  • grapes, rinsed
  • canned mandarin oranges, drained
  • canned pineapple, drained

Citrus Syrup

  • ½ cup white sugar
  • pinch of salt
  • 1 Tbsp corn starch
  • ½ cup orange juice
  • 2 Tbsp lemon juice
  • ¼ cup water
  • ½ tsp grated orange rind *optional

Instructions
 

  • Preheat oven to 350°.
  • Prepare pie pan: Spray generously with cooking spray or rub with shortening.
  • Place cookie dough into pie pan and press into pie crust using fingers.
  • Bake for 20-25 minutes in center of oven until crust begins to brown and is no longer doughy in the center.
  • Remove from oven and cool completely.
  • Using beaters, whip the cream cheese and cool whip together.
  • Spread in cooled pie crust.
  • Decorate with prepared fruit.

Citrus Syrup

  • In a saucepan combine sugar, salt, corn starch, orange juice, lemon juice and water. Whisk over medium-high heat until it comes to a boil. Continue whisking for around 2 minutes until it thickens into a syrup, about the consistency of pancake syrup.
    Add orange rind if desired.
  • Allow to cool for 30 minutes. Spoon the syrup over the pie coating all the fruit and covering the cream cheese mixture. (*there may be some leftover)
  • Chill for an hour if you can stand it.
    Cut into wedges to serve.
