This is a magical version of mashed potatoes that you won’t soon forget. Butter, cream, garlic, fresh herbs and goat cheese! What could be better! Serve with any special meal or just eat them all by themselves!

I saw Jack Cohen @jackcohen make these on IG and had to give it a go! They are heavenly! I created a recipe using his ingredients so try them out!

Peel and cube russet potatoes…cook in salted water, drain and set aside.

Then heat up everything else in a saucepan.

Mash the potatoes…I like to leave them a little chunky. Add in the butter and cream mixture.

And there you are! HEAVEN!

Goat Cheese and Rosemary Mashed Potatoes

Rich and creamy potatoes with goat cheese and fresh herbs. Absolutely delicious. @mostdeliciouslife.com

Ingredients
  

  • 3 pounds russet potatoes
  • ½ cup butter
  • 1 tsp minced garlic
  • 1 Tbsp fresh rosemary, minced *or 1 tsp dried
  • 2 tsp fresh thyme, minced **or ½ tsp dried
  • 1 cup heavy cream
  • 4 ounces goat cheese
  • salt and pepper

Instructions
 

  • Peel and cut potatoes into cubes. Place in pot and cover with water and 1 Tbsp salt. Bring to a boil. Lower heat, cover and simmer for 15 minutes. Drain water and keep covered until ready to use.
  • In sauce pan melt butter over medium heat. Add garlic, herbs, cream and goat cheese. Stir until cheese is melted and mixture is heated.
  • Use potato masher to mash potatoes. Add in cream mixture and mix well.
  • Salt and pepper to taste.
