Brownies are always a welcome treat…and then add a rich, creamy mint layer and top with chocolate ganache and you have something magical.
They are also called Creme de Menthe Brownies or just mint brownies.
This was one of Corinne’s favorite things to make while she was in High School. We had some very late night grasshopper brownies.
Make basic brownies for the base. **You can make our recipe or just use a box mix.
For the brownies start by creaming together shortening and sugar.
Whip in the eggs and vanilla.
Melt unsweetened chocolate. Let it cool and then mix in.
Add in dry ingredients…
and spread into 9×13 inch baking dish, greased, sprayed or lined with parchment paper.
Bake and cool. Trim the sides if they raise too high.
Whip together butter and cream cheese.
Add mint extract and green food coloring. Continue adding until you get the desired color.
Spread onto cooled brownies.
Melt the butter and chocolate chips by microwaving in 30 second increments. Stir each time until the chocolate is melted.
Cover and refrigerate 3-4 hours.
Cut up and serve!

Grasshopper Brownies
Ingredients
Brownies
- **OR USE BROWNIE MIX
- 1 cup shortening
- 2 cups sugar
- 4 large eggs
- 2 tsp vanilla
- 4 ounces unsweetened baking chocolate **melted and cooled
- 1½ cups flour
- 1 tsp baking powder
- 1 tsp salt
Mint Filling
- 1 cup butter **room temperature
- 6 ounces cream cheese **room temperature
- 5 cups powdered sugar
- 1½-t tsp mint extract **can use peppermint extract
- 4-6 drops green food coloring
Chocolate Topping
- 2 cups semi-sweet chocolate chips
- ⅔ cup butter
Instructions
- Preheat oven to 350°.
- Grease 9×13 inch baking dish.
- In mixing bowl, cream together shortening and sugar.
- Beat in eggs, vanilla and melted chocolate.
- Mix dry ingredients and add to chocolate mixture.
- Spread in prepared pan. Bake for 25-minutes. *Shake pan slightly to see if center is set.
- Allow to cool completely.
Mint Filling
- In mixing bowl, beat together butter, cream cheese and powdered sugar.
- Add mint extract and food coloring. Whip with beaters until well mixed and creamy.
- Spread onto cooled brownies. **If necessary trim edges of brownies first.
Chocolate Top
- Melt together chocolate chips and ⅔ cup butter.
- Pour melted chocolate over the mint layer. Spread with a spoon.
- Cover or refrigerate for 3-4 hours or overnight. Cut into squares and serve.
These are so delicious and impress people while being easy enough for even me to make!
