Haluski is the comfort food you have never heard of! It’s the Eastern European equivalent of mac and cheese. My husband loves cabbage dishes and I love pasta, so it makes us both happy.
Fry up the bacon until crispy but be careful that it doesn’t burn…but if it does a little bit it’s ok.


Add in onions with 1/2 tsp salt and cook over medium-high heat. Stir regularly for about 10 minutes. I actually set a timer to make sure that I cook it long enough.


Add in cabbage and carrots and cook and stir until the cabbage is reduced by about half….should take about 12 minutes.


Cooking the veggies slow like this almost caramelizes them. Delicious.
Meanwhile, cook the noodles to al dente. Drain the noodles and save 3/4 cup of the pasta water.
When the cabbage is reduced to about half, throw in the garlic and cook for about a minute.
Then throw it all together!


Serve it up hot! Delicious!

Haluski – Fried Cabbage and Noodles
Ingredients
- 6 oz thick bacon
- 6 Tbsp butter
- 1 large onion, halved and thinly sliced
- 1 small cabbage – halved, cored and thinly sliced **about 5-6 cups
- 1 cup carrots, grated
- 2 cloves garlic, minced
- 9 oz egg noodles
- 2 tsp black pepper
- 1 tsp salt
- 1 Tbsp lemon juice
Instructions
- Cut bacon into ¼ inch pieces. Fry over medium-high heat until bacon is crispy but not burnt. Remove bacon pieces and drain on paper towels.
- Add butter to bacon grease in pan and stir until melted.
- Stir in onions and ½ tsp of salt. Cook and stir occasionally over medium high heat until onions are soft and starting to carmelize, about 10 minutes.
- Add cabbage and carrots. Continue cookies over medium-high heat until cabbage is reduced by about half, 10-12 minutes.
- Meanwhile, cook noodles according to package directions for al dente. Drain and save ¾ cup of the pasta water.
- Add garlic to cabbage mixture. Cook and stir for 1 minute.
- Stir in noodles, pasta water, salt, pepper, bacon and lemon juice. Stir well. Serve hot.
