These muffins may well be my husband’s favorite thing that I bake. They are really SPECIAL.

Apples, carrots, zucchini, coconut, almonds, orange peel and cinnamon!

What an amazing mixture of goodness.

This recipe comes from a good friend back in my Oregon days, Gina Trommlitz. Thank you Gina. What a gift.

So, fill a big bowl with:

shredded CARROTS, chopped APPLE, shredded ZUCCHINI, chopped ALMONDS, COCONUT & fresh grated ORANGE PEEL.


Next mix all your dry ingredients in one bowl and the eggs, applesauce and vanilla in another.

Mix the egg mixture with the dry ingredients but DON’T OVER-STIR!

Now fold it all into the carrot/apple mixture.

I don’t use cupcake liners because too much of the muffin sticks to the paper!

But either way is good.

Bake & cool and get ready to enjoy a little bit of heaven!

Eat them hot out of the oven if you like.

But they are also great to wrap&freeze for GRAB&GO!

Apple Zucchini Muffins

These are packed full of goodness with apple, zucchini, carrot, coconut and more! A heavenly treat!

  • 2 cups shredded carrots
  • 1 cup shredded zucchini
  • 1 cup apple, peeled and chopped
  • ¾ cup coconut
  • ½ cup almonds, chopped
  • 2 tsp orange peel
  • 2 cups flour
  • cup sugar
  • 1 Tbsp cinnamon
  • 2 tsp baking soda
  • ½ tsp salt
  • 3 eggs
  • ¾ cup applesauce
  • 1 tsp vanilla


  • Preheat oven to 350°,
  • Prepare 18-24 muffin tins. Line with cupcake papers or spray with cooking spray.
  • In large bowl mix together the carrots, zucchini, apple, coconut, almonds and orange peel. Set aside.
  • In separate bowl mix together flour, sugar, cinnamon, baking soda and salt.
  • In third bowl whisk together the eggs, applesauce and vanilla. Stir into dry ingredients until JUST MIXED.
  • Fold into carrot/apple mixture, until JUST MIXED.
  • Spoon into muffin tins, about ⅔ full.
  • Bake for 22-25 minutes.
  • Remove to cooling rack and allow muffins to cool for 5 minutes.
  • Remove muffins to cooling rack.
