Crispy potato slices topped with bacon and cheese…what could be better?

These were actually created at Gilligans Bar and Grill in Texas in 1979. Soo…they aren’t exactly Irish but they are made with potatoes, so it works. I have no idea if they have caught in in Ireland and are served there. I will have to take a trip and find out.

Some restaurants make these with waffle fries, which would definitely be easier. Just sprinkle with seasonings before baking. And you could really layer anything in…shredded meat, ground beef, green peppers etc.

So here’s what you do:

Wash and dry the potatoes and slice them about 1/4 inch thick. Mix in the olive oil and spices.

Cook until crispy on the outside but soft on the inside.

Spread the cooked potato slices on the bottom of the baking dish.

Cover with half of the cheese, bacon and onions.

Add the remaining potatoes and complete another layer.

Put under the broiler until all the cheese is melted.

Serve with sour cream and diced tomatoes. Add cilantro if desired.
