I have always loved the taste of maple syrup. When I was a kid the lunch ladies at my school made the most amazing maple bars you ever tasted. It was always a good day when they were on the lunch menu.
If you are a maple lover then you will love this pie. It is delicious all on it’s own but the sugared almonds take it to another level.

Bake and cool the crust before making the filling.
Grab a medium sauce pan and mix everything together except for the vanilla and maple flavoring. Heat over medium and stir-stir-stir until it comes to a boil.



I use a whisk because it helps to smooth everything out. Sifting the cornstarch helps too.
It will thicken as it comes to a boil. Remove the pan from heat and add the vanilla extract and maple flavoring.

Pour it all into the baked-and-cooled pie crust. Spread it smooth and cover it with cling wrap.
Refrigerate at least 4 hours….overnight is better.

Make the sugared almonds by stirring the nuts and sugar together over medium heat until the sugar is melted and the nuts are coated. After it cools, break it into pieces.
Serve pie with whipped cream and sugared almonds.

Maple Cream Pie with Sugared Almonds
Ingredients
- 1 baked pie crust
- 3 cups half and half
- ½ cup maple syrup
- 4 large egg yolks
- 1 cup brown sugar
- ⅓ cup corn starch, sifted
- ¼ tsp salt
- 1 tsp vanilla extract
- ¼ tsp maple flavoring optional
Sugared Almonds
- ⅓ cup sliced almonds
- 1 Tbsp sugar
Instructions
- Whisk the half and half, maple syrup, brown sugar, egg yolks, brown sugar, cornstarch and salt in a medium saucepan. Place over medium heat and stir until mixture thickens and comes to a boil, about 10 minutes.
- Remove from heat and stir in vanilla and maple flavoring.
- Pour into cooled pie crust. Cover and refrigerate for at least 4 hours. Overnight is best.
- For the sugared almonds, mix the almonds and sugar in a small frying pan over medium high heat, stirring until sugar is melted and nuts are coated. Turn out onto parchment paper or wax paper to cool. Break up into pieces after it's cool.
- Serve pie with whipped cream (or cool whip) and sprinkle with sugared almonds.
