Marry Me Chicken has been a THING for awhile. It’s so good that people will want to put a ring on it! This is the soup version!
It has an amazing taste profile: rich with cream and cheese with fresh basil and sundried tomatoes. Throw some pasta, chicken and spinach and you have a mighty fine soup! MMM MMM GOOD!
Serve with some good bread and a salad and ENJOY!!!
Use the sun-dried tomatoes in oil because we are going to use the oil from the tomatoes to brown the garlic and onions. YUM!
Then add in some sun-dried tomatoes….
Pour in the chicken broth and some heavy cream. Then add all the spices….
Bring just to a boil and add in the pasta. Turn the heat down and cover….cook for 8 minutes.
Add in spinach, parmesan cheese….
…chicken and cream cheese.
Let it all melt together.
Serve with some yummy bread.

Marry Me Soup

Ingredients
- 1 Tbsp oil from jar of sun-dried tomatoes
- 4 tsp minced garlic
- 1 medium onion, chopped
- ⅔ cup sundried tomatoes, chopped
- 3 Tbsp tomato paste
- 8 cups chicken broth
- 1 cup heavy cream
- 2 Tbsp fresh basil, chopped *or 2 tsp dried basil
- 1 tsp garlic powder
- 1½ tsp Italian seasoning
- 1 tsp salt
- ¼ tsp crushed red pepper
- 6 ounces uncooked pasta of choice *I used medium shells
- 3-4 cups baby spinach, roughly torn
- 1½ cups parmesan cheese, shredded
- 2 cups cooked chicken *I used rotisserie chicken
- 8 ounces cream cheese, cut in cubes
Instructions
- Measure out 1 Tbsp of oil from the jarred sun-dried tomatoes into heavy pot over high heat.
- Add garlic and onions. Cook and stir 3-5 minutes until onions are softened. Stir in the sun-dried tomatoes. Sauté for another minute.
- Pour in the chicken broth and heavy cream. Stir in basil, garlic powder, Italian seasoning, salt and crushed red pepper.
- Heat until it just comes to a boil. Stir in the pasta. Bring the soup back to a boil and turn to low. Simmer for 8 minutes.
- Stir in the spinach, parmesan and chicken. Stir until parmesan is heated.
- Mix in the cream cheese. Cover with lid and turn heat to low. Stir every few minutes until cheese is melted.
