When we lived in Oregon our favorite Mexican restaurant would always bring out a plate with half cabbage salsa and half with hot bean dip. With their fresh tortilla chips it was the most delicious thing EVER! It was worth going just for that.

This is so great as a snack but can also be used in so many ways. My husband loves this on his eggs. Or serve with grilled chicken.

It’s a good thing to always have in your refrigerator.

Just chop chop chop!…

         …cabbage, tomatoes, red onion, pickled jalapeños and cilantro… 

 

               Add in some of the pickling juice from the jarred jalapeno’s.

                                     Stir in garlic, lime juice, vinegar, salt and sugar.

                Cover and refrigerate for at least 30 minutes. This is SO IMPORTANT.

                                           Stir is all up again, and serve.

             My favorite way to eat this is with half a plate of bean dip. Absolutely delicious!

Mexican Cabbage Salsa

Ingredients
  

  • 8 cups cabbage, chopped small **½ a medium head of cabbage
  • 1 cup red onion, minced
  • 4 Roma tomatoes, chopped
  • ½-1 cup pickled jalapeños, chopped **choose your heat level!
  • 1 tsp minced garlic
  • 4 Tbsp lime juice, fresh if possible **about 2 limes
  • 2 Tbsp jalapeño juice **from the jar
  • 2 Tbsp white vinegar
  • 3 tsp kosher salt
  • 1 tsp sugar

Instructions
 

  • Mix everything together in a large bowl.
    Cover with cling wrap and refrigerate at least 30 minutes.
  • Serve with tortilla chips and bean dip if desired.
