My favorite thing to order at Taco Bell has always been their Mexican Pizza. It’s everything that is delicious in a burrito but spread on crispy tortillas.
Our version is much healthier but just as yummy.
You can use either corn or flour tortillas. I bake them in a 400 degree oven, sprayed with cooking spray until crispy.
Cook ground turkey and then add taco seasoning.
Place 6 tortillas on baking sheet. Spread each with enchilada sauce, red or green.
Spread with a generous amount of refried beans.
Spoon on seasoned turkey and top with cheese.
Top each with another tortilla. Spoon on more enchilada sauce and cheese.
Bake for 10 minutes.
Cover with toppings and cut into wedges.
Mexican Pizza

Ingredients
- 1 pound ground turkey
- 1 packet taco seasoning
- 1 30 ounce canned refried beans
- 1 15 ounce enchilada sauce, red or green
- 2-3 cups grated cheese, cheddar or Mexican blend
- 20 small tortillas, corn or flour
- cooking spray
Toppings
- sour cream
- guacamole
- sliced olives
- sliced green onions
- diced tomtoes
Instructions
- Preheat oven to 400°.
- Spray 2 large baking sheets with cooking spray. Cover with tortillas, doing two batches if necessary. Bake for 6 minutes. Flip with tongs. Bake another 6-10 minutes until crispy. Set aside.
- Over high heat, cook ground turkey breaking up with spoon.Stir in ¾ cup water and 1 packet of taco seasoning. Mix well and heat until bubbling. Cook and stir for 1 minute. Remove from heat.
- Place 6 tortillas on baking sheet. Spread about 1 Tbsp of enchilada sauce onto each tortilla. Spoon on a generous layer of refried beans.
- Spoon on the meat mixture. Sprinkle with cheese.
- Cover with another tortilla.
- Spread enchilada sauce on top. Cover with cheese.
- Bake for 10 minutes.
- Top with sour cream, guacamole, sliced olives, diced tomatoes and sliced green onions. Use a large knife to cut each pizza into 4 wedges.
