This is a fast and easy meal your family will LOVE. If you want to make it even easier just use rotisserie chicken.
I always make a big batch…they are great to grab for lunch and are even good cold!
The chicken filling is so easy to throw together.
Lay out the tortillas and smooth on a little refried beans.
Add avocado and roll it up nice and tight. Place them seam side down on a sprayed baking sheet.
Put out a bowl of sour cream, some guacamole and some diced tomatoes.

Oven Baked Chimichangas
Seasoned chicken, avocado and beans wrapped in a crispy tortilla. Fast, easy and delicious! @mostdeliciouslife.com
Ingredients
- 2 cups chicken, cooked and shredded
- 1 cup salsa
- 1½ tsp cumin
- 1 tsp salt
- 1 cup shredded cheese
- 3-4 green onions, sliced
- 1 15 ounce refried beans
- 1 ripe avocado, sliced
- 6 8 inch tortillas
- ¼ cup butter, melted
Instructions
- Preheat oven to 400°.
- In medium bowl, mix together chicken, salsa, cumin, salt, cheese and green onions.
- Lay out tortilla. Spread about 2 tablespoons of refried beans in center of each tortilla.
- Spoon on about ½ cup chicken mixture. Lay 2-3 avocado slices on top.
- Fold in two sides of tortilla and roll up. Place seam side down on baking sheet baked with cooking spray.
- Spoon melted butter over chimichangas.
- Bake for 25 minutes.
- Garnish with sour cream, guacamole and chopped tomatoes.
