This is a fast and easy meal your family will LOVE. If you want to make it even easier just use rotisserie chicken.

I always make a big batch…they are great to grab for lunch and are even good cold!

The chicken filling is so easy to throw together.

Lay out the tortillas and smooth on a little refried beans.

Add avocado and roll it up nice and tight. Place them seam side down on a sprayed baking sheet.

Put out a bowl of sour cream, some guacamole and some diced tomatoes.


Oven Baked Chimichangas

  • 2 cups chicken, cooked and shredded
  • 1 cup salsa
  • tsp cumin
  • 1 tsp salt
  • 1 cup shredded cheese
  • 3-4 green onions, sliced
  • 1 15 ounce refried beans
  • 1 ripe avocado, sliced
  • 6 8 inch tortillas
  • ¼ cup butter, melted


  • Preheat oven to 400°.
  • In medium bowl, mix together chicken, salsa, cumin, salt, cheese and green onions.
  • Lay out tortilla. Spread about 2 tablespoons of refried beans in center of each tortilla.
  • Spoon on about ½ cup chicken mixture. Lay 2-3 avocado slices on top.
  • Fold in two sides of tortilla and roll up. Place seam side down on baking sheet baked with cooking spray.
  • Spoon melted butter over chimichangas.
  • Bake for 25 minutes.
  • Garnish with sour cream, guacamole and chopped tomatoes.
