Ok. These are actually mini muffins. And I used to make them full size, and you can too.

BUT. My family likes them as minis and before too long everyone started calling them donut holes.

They pretty easy to make…just mix all the dry ingredients in one bowl and all the wet in another and then mix them all together.

Spray your mini muffin pin with cooking spray and fill tins with a teaspoon to about 2/3 full.

Bake them up and then cool.

Roll them in butter and cinnamon & sugar or glaze them. Either way they are DELICIOUS.

Pumpkin Spice Donut Holes

Equipment

  • mini muffin pan

Ingredients
  

  • cup flour
  • ¾ cup sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • 2 eggs
  • 1 15 ounce pumpkin
  • ½ cup coconut oil, melted and cooled **can use canola or vegetable
  • 1 tsp vanilla

Cinnamon Coating

  • ½ cup butter, melted
  • 1 cup sugar
  • ½ tsp cinnamon

Glaze

  • cups powdered sugar
  • 1-3 Tbsp milk, more if needed
  • ½ tsp vanilla
  • sprinkle nutmeg or pumpkin pie spice

Instructions
 

  • Preheat oven to 350°.
  • Mix all dry ingredients together in a large mixing bowl. Set aside.
  • Whisk eggs in a medium mixing bowl.
  • Add in pumpkin, oil and vanilla. Whisk together.
  • Pour wet ingredients into dry and mix until well incorporated. Don't over mix.
  • Spray mini muffin tin with cooking spray.
  • Spoon batter into muffin tin with a teaspoon, filling about ⅔.
  • Bake for 12-15 minutes.
  • Remove from tin and cool completely.

Cinnamon Coating

  • Mix cinnamon and sugar in small bowl.
  • Coat each muffin in butter and then roll in cinnamon and sugar.

Glaze

  • Whisk powdered sugar and milk together, adjusting milk as needed. It should be about the same consistency as honey.
  • Add vanilla and nutmeg. Roll donut holes in glaze. Place on cooling rack to dry.
