Birria Tacos are THE THING! They are based on the sauce (or consommé) from Birria Stew, a fabulous dish from the Mexican state of Jalisco.

The meat is flavored with the sauce, the tacos are cooked nice and crispy and THEN the tacos are dipped in the sauce with each bite.

It’s Mexico’s version of French Dip.

The process involves braising and stewing beef…but this is the shortcut version.

It’s really pretty easy! Give it a try!

To make if fast and easy I use ground meat. **I pretty much use ground turkey for everything these days. 

Brown the meat and add in some Birria sauce. Let it simmer and thicken a bit.
Cook the tortillas by dipping on into Birria sauce and gently lift into a skillet with hot oil.
NOTE** Make sure to let the tortilla fry until it’s firmed up a bit before flipping or it will fall apart.

 

After flipping the tortilla, spread half with ground meat, cheese, green onions & cilantro.

Add more oil as needed so that the tacos are fried and crispy.

Serve with warmed Birria sauce for dipping.

Quick And Dirty Birria Tacos

Ingredients
  

  • 1 pound ground meat **I used ground turkey
  • 2 cups Birria sauce
  • corn tortillas
  • Monterey Jack cheese **or any good melting cheese
  • Vegetable or Canola oil
  • green onions
  • cilantro

Instructions
 

  • Preheat oven to 300°.
  • Brown ground meat. Drain if necessary.
    Add ¾ cup Birria sauce and mix well. Bring to a boil and then turn to medium heat. Let simmer while stirring occasionally for about 5 minutes. Salt and pepper to taste. Pour into a bowl and set aside.
  • Heat remaining Birria sauce.
  • Wipe out skillet. Add enough oil to cover the bottom of the pan. Heat to medium high.
  • Dip one corn tortilla into the Birria sauce and gently lift into oiled skillet. Allow to sit for a full 30 seconds or the tortilla will fall apart.
    Use a pancake turner to flip over.
  • Spoon about half a cup of the ground meat onto half of the tortilla. Top with cheese. Add green onions and cilantro if desired.
    Fold the other side over the filling and allow to cook 2-3 minutes until crispy.
    Flip over and cook another 2-3 minutes adding more oil as necessary.
  • Drain on paper towels. Place on a baking sheet and keep warm in oven until all are completed.
  • Serve tacos with warmed Birria sauce for dipping.
