These cookies will surprise you. They are not what you expect. I hear that comment from people all the time. Even if you don’t like raisins, you will probably like these. Or, more likely, you will LOVE them.

I don’t roll them out and make them all pretty. Even so, I really like the way they look. It just works.

The cookies are very easy to mix together.

Beat together the shortening and sugars. Then beat in the eggs and milk.

Stir in the dry ingredients and then form the dough into several rolls and wrap in cling wrap.

Chill for an hour.

While the cookie dough is chilling make the raisin filling.

In a saucepan, stir together the raisins, water, sugar, flour and vanilla. Cook and stir until it boils. Stir and boil for a couple of minutes.

Pour into blender and blend together.

Pour back into saucepan.

Chop walnuts and stir into filling.

Slice the cookie dough into about 1/4 inch slices. Place slices onto cookie sheet and press a well into each cookie.

Spoon raisin filling onto each cookie.

Slice a thin piece of dough and place on top of raisin filling. Or just form a disc with your hands out of the dough to top cookies.

Here’s the thing with these cookies. I just use the “throw-together” method. Nothing pretty or perfect. Just throw them together. For the tops, just top with a piece of dough.

Bake for 15 minutes.

Cool on a rack and then ENJOY!!!!

Raisin Filled Cookies

Ingredients
  

  • 2 cups shortening
  • 2 cups white sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 Tbsp milk
  • 7 cups flour
  • 2 tsp baking soda
  • 1 tsp salt

Raisin Filling

  • 2 cups raisins
  • 1 cup water
  • ¾ cup white sugar
  • 1 Tbsp flour
  • 1 tsp vanilla
  • 1 cup walnuts, chopped

Instructions
 

  • In a large mixing bowl, combine shortening and sugars with an electric beater until fluffy.
  • Beat in eggs and milk.
  • Stir in flour, baking soda and salt. Mix well. If cookie dough is too crumbly, add milk 1Tbsp at a time until it holds together.
  • Form dough into logs about 2 inches in diameter. Wrap in cling wrap and chill for an hour.
  • While the dough is chilling make the raising filling.
    RAISIN FILLING
    Mix the raisins, water, sugar, flour and vanilla in a saucepan. Cook and stir until it comes to a boil. Stir and boil for 2 minutes.
    Pour into a blender and blend together.
    Pour back into the saucepan and stir in walnuts.
    Set aside for later.
  • Preheat oven to 350 degrees.
  • Line cookie sheets with parchment paper or a silicone baking sheet.
  • Cut chilled cookie dough into slices about ¼ inch thick.
  • Place cookie rounds onto cookie sheet. Use fingers to create a well in the center of each cookie.
  • Spoon 1-2 teaspoons of the raisin filling onto each cookie.
  • Make more slices about ⅛ inch thick. Place a slice on top of each cookie.
    **Don't worry about perfection. Sometimes I just form a disc with the dough and place it on top.
  • Bake for 15 minutes.
    Cool on rack.
