Watching my mom make this candy every Christmas is a core memory for me. She always made a LOT and handed it around whenever company showed up and sent it out on goodie plates. Things like this become a part of holiday tradition. Food is such an important part of the magic.
They are pretty fast and easy so a winner on all fronts!
Melt the butter and chocolate together.
Next mix in the powdered sugar and egg until smooth and creamy.
Fold in the nuts and marshmallows.
Spread coconut onto a clean counter and spoon chocolate down the center.
Wrap in cling wrap and chill for 3 hours. Slice into pieces.
Store covered in refrigerator when not serving.

Rocky Road Fudge Roll
Ingredients
- ½ cup butter
- 2 ounces baking chocolate, unsweetened
- 1½ cups powdered sugar
- 1 large egg, beaten
- 1 cup walnuts or pecans, chopped
- 6 ounces mini marshmallows **3½ cups2
- 2 cups coconut
Instructions
- In medium saucepan heat and stir butter and chocolate on medium-low heat until just melted. Remove from heat and cool for 5 minutes.
- Stir in powdered sugar and beaten egg. Whip together until creamy. **the egg will cook sufficiently as it is whisked into the warm chocolate.
- Fold in nuts and marshmallows.
- Spread the coconut on the counter in a rectangle about 10 inches long. Drop about ⅓ of the chocolate mixture down center of coconut.
- Using hands pat coconut on chocolate forming it into a roll and completely covering with coconut, about 1½ inches in diameter.
- Carefully transfer chocolate roll onto a piece of cling wrap and fold the wrap snuggly around the roll. Make two more rolls using up the remainder the chocolate.
- Place wrapped rolls onto a cookie sheet and place in refrigerator for 3 hours.
- Remove from refrigerator and unroll. With a sharp knife cut into slices about ½ inch thick. Keep covered in refrigerator until ready to serve.
Can I use cocoa powder instead of unsweetened bars?
I’m not sure how much you would put in to replace it, and it would alter the fudge completely because you are adding a dry ingredient in place of a wet one. I’m not sure how that would work or if it would be good. It definitely wouldn’t be fudgy.
I know this post is 2 years old & I don’t know if you’ll even see this, but I wanted to thank you so much for this. I’ve been looking for this recipe for years! My mom used to make it every Christmas, but her recipe (like her) is long gone & every “rocky road” recipe I’ve found is made in squares like regular fudge & not rolled in coconut. My sister & I had just about given up, but this is the one we remember. You’ve brought back a lot of wonderful memories for both of us.
