I LOVE fried rice. I know that technically it’s a side dish, but I often serve it as the entree. Add a salad and cook some frozen egg rolls and it makes a fantastic meal.

There are a couple of important things to know when making fried rice.

The rice should be a day old. So, save your leftover rice or cook some the day before. Put it in the refrigerator right away until ready to use. Also, don’t use regular long grain rice. It’s too moist and clumpy. I always use basmati or jasmine.

Stir-fry in a very hot skillet or wok.

One thing that gives fried rice that delicious flavor are the eggs. Mixing some of the egg yolks into the cold rice coats each piece of rice with flavor and also helps to keep the rice from clumping.

Use a spoon or your hands to mix the yolk into the rice.

Chop the onion and carrots, heat the oil nice and hot and you are ready to go!

Add the remaining oil and throw in the rice. Stir fry for a good 6-7 minutes.

Add the peas and stir fry a couple of minutes longer.

Move the rice to the side and pour in the egg mixture and allow it to sit and cook for a bit.

Top with green onions and serve!

Serve with extra soy sauce and Chinese mustard.
