I LOVE dishes made with phyllo. It provides such a unique texture.

Phyllo originated in Turkish and Middle Eastern cuisines and was used to make pastries, such as baklava. Using it in savory dishes is a relatively new development.

This spinach pie is the perfect mix of flavors and textures and is so delicious!

Brown the sausage, drain the grease and set it aside to cool.

Spray your casserole dish with baking spray. Use half of the phyllo for the bottom, buttering every 3-4 sheets.

Pour the spinach and sausage mixture over the phyllo.

Cover with remaining phyllo, buttering every 3-4 sheets.

Bake for 50-60 minutes. The top will be brown and crispy. Check at about 40 minutes to make sure the top isn’t browning too much. If so, cover loosely with foil for remaining time.

Cut into squares and serve!

Spinach Pie

This is a delicious and elegant dish that is great for dinner, brunch or breakfast!

Ingredients
  

  • ½ package phyllo
  • 1 pound Sweet Italian Sausage **I use turkey sausage
  • 1 10 ounce fresh spinach
  • 6 large eggs
  • 2 cups mozzarela cheese
  • cup ricotta cheese
  • ½ t salt
  • t garlic
  • ¼ t pepper
  • ¼-½ cup melted butter

Instructions
 

  • Preheat oven to 350°.
  • Thaw phyllo dough according to package directions.
  • Brown sausage and drain any grease.
  • In large bowl, mix the sausage with the spinach.
  • Mix together mozzarella, ricotta, eggs and seasonings.
  • Pour over the sausage and spinach and mix well using tongs.
  • Spray 9×13 inch casserole dish with cooking spray.
  • Use about ½ of phyllo layers for the bottom. Layer 3-4 sheets at a time, basting with melted butter inbetween. Continue layering using half of the phyllo.
  • Spoon the spinach and sausage mixture over the phyllo.
  • Use the remaining phyllo to cover the spinach mixture, basting with butter every 3-4 sheets. Butter top phyllo sheet.
  • Bake for 50-60 minutes. Check halfway and if phyllo is getting too dark cover loosely with aluminum foil for remaining time.
  • Cut into squares and serve.
  • To reheat leftovers, back in oven at 300° for 15-20 minutes.
