Another Vintage Casserole and this one is FABULOUS!

I first started making this as a newlywed and it has always been one of our favorites. You can use leftover beef from a pot roast or just buy a good steak. It’s a nice change up and a great way to use summer veggies.

Cut steak or high-quality beef into bite-size pieces. Saute in olive oil.  **OR use leftover steak or roast

Use a good Artisan bread and cut into cubes.

Mix with melted butter and cheese.

Keep some aside for the topping and place the rest in a greased casserole dish.

Spoon peas over bread mixture.

Saute onion in melted butter, add in flour and spices and cook ’til bubbling.

Add in milk and stir until bubbling and thickened. Continue cooking for another minute.

Add in the meat and spread over the peas.

Slice tomatoes and arrange over the casserole. Top with remaining bread cubes.

Bake for 35 minutes and EAT UP!!! SO YUMMY!

Steak and Veggie Hot Dish

Ingredients
  

  • 1 Tbsp olive oil
  • 2 cups steak or good beef, cut into bite-size pieces **Or leftover beef cut into cubes
  • cups white artisan bread, cut into cubes
  • cup sharp cheese, shredded
  • 5 Tbsps butter, melted
  • 2 cups peas, fresh or frozen *If frozen, thaw and rinse. *or other vegetable
  • 4 Tbsps chopped onion
  • 6 Tbsps butter
  • 6 Tbsps flour
  • 2 tsps salt
  • ½ tsp pepper
  • 3 cups milk
  • 2 large tomatoes, fresh

Instructions
 

  • Preheat oven to 350°.
  • Heat olive oil in skillet. Add cut up steak and saute until cooked through. Salt and pepper. Set aside.
  • Mix bread cubes, cheese and 4 Tablespoons butter.
  • Spread bread mixture in greased casserole dish. Reserve 1½ cups for topping.
  • Top with peas.
  • Melt 6 Tbsps butter in skillet. Saute onions until tender.
  • Blend in flour and seasonings. Stir over medium heat, stirring, until mixture is bubbly.
  • Whisk in milk and heat to boiling, stirring constantly. Boil and stir 1 minute.
  • Stir meat into sauce and pour over bread layer in casserole dish.
  • Slice tomatoes and arrange over casserole. Sprinkle with remaining bread cubes.
  • Bake uncovered for 35 minutes.
