For years I have worked on a Butternut Squash soup recipe and have never been able to get it just how I wanted. So, recently I decided to work on a Sweet Potato Soup recipe and NAILED IT! It is everything I always wanted from my other attempts.

I wanted it to taste like a bowlful of AUTUMN.

This soup is the perfect mix of sweet and savory. It will give you all the feels.

 

Start by sauteing the onions and carrots.

Then add in onion, apple, celery and garlic and sauté for another couple of minutes.

Mix in seasonings, broth and coconut milk.

Turn heat to high and bring to a boil.

Reduce heat, cover and simmer until veggies are soft.

Use an immersion blender till desired smoothness. **If you don’t have an immersion blender just do it in batches in your regular blender.

Salt and pepper to taste.

The toppings are EVERYTHING! Put out SOUR CREAM (I thin it a little with milk or water) PEPITAS (or pumpkin seeds), CILANTRO and RED PEPPER FLAKES.

Sweet Potato Soup

Ingredients
  

  • 2 Tbsp olive oil
  • 1 cup carrots, chopped
  • 1 onion, chopped
  • 1 large apple, peeled and chopped **any sweet apple
  • 2 celery stalks, chopped
  • pounds sweet potatoes, peeled and chopped 1 inch pieces **about 3 potatoes
  • 3 tsp garlic, minced
  • 1 tsp salt
  • ¾ tsp ginger
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp red pepper flakes
  • ¼ tsp cinnamon
  • 3 cups broth, vegetable or chicken
  • 1 14 ounce coconut milk, full fat

Toppings

  • sour cream, thinned with a little milk
  • roasted pumpkin seeds or pepitas
  • chopped cilantro
  • red pepper flakes

Instructions
 

  • Heat oil in large pot. Add carrots and onions and sauté until softened, about 5 minutes.
    Mix in onion, apple, celery, sweet potatoes and garlic and sauté for 2 more minutes.
  • Add remaining ingredients and bring to a boil, stirring a couple of times. Reduce heat to low, cover and simmer for 20-25 minutes until vegetables are soft.
  • Use an immersion blender to puree the soup to desired consistency.
    Add additional broth if needed.
    Top with sour cream, pepitas, cilantro and red pepper flakes.
