This is one of my all time favorite salads. I once made this for lunch at a family reunion for 70 people. I won’t ever do that again.

I’ve also adapted and simplified it from back in the day….I now use a pre-shredded cabbage/carrot mix and rotisserie chicken.

One key element is the green papaya. It really makes the salad special.

I prefer cutting it into about 2-inch strips (julienned) as opposed to grating…I like the bigger pieces. You do you.

 

Mix all the veggies and papaya in a bowl…

 

and add in the chicken and peanuts.

 

Whisk the dressing together…

 

Pour it on and mix it in.

Serve with more cilantro and peanuts.

Thai Chicken Salad

Ingredients
  

  • 4 cups shredded cabbage with carrots
  • cups Green papaya, shredded or julienned
  • ½ cup cilantro, chopped
  • ½ cup green onions, sliced
  • 2 cups chicken breast, cooked and shredded or cut up **I use rotisserie chicken1
  • 1 cup roasted peanuts, chopped

Dressing

  • 2 tsp garlic, minced
  • 3 Fresno peppers, diced – about ½ cup **can substitute with any other pepper
  • 2 Tbsp soy sauce
  • 2 Tbsp vinegar
  • 2 Tbsp sugar
  • 1 Tbsp lime juice
  • ½ tsp fish sauce
  • ¼ cup peanut butter
  • ¼ cup vegetable or canola oil

Instructions
 

  • Mix shredded cabbage with carrots with all other vegetables.
  • Stir in chicken and peanuts.
  • Whisk together all dressing ingredients.
    Pour over salad and mix well.
    Serve with additional cilantro and peanuts.
