Whoopie pies are one of those things that I forget how good they are until I make them again. And then I eat too many while exclaiming, “These are so good!” I guess they are called whoopie pies for a reason.
I was introduced to these while living in Pennsylvania many many years ago by my friend Gloria. This is her recipe she shared with me.
They are the BEST treat ever for any occasion and can be used for any holiday. Corinne makes these for Halloween by coloring the filling orange. Or you can go way fancy and decorate the tops.
These are easier than you would think and will IMPRESS everywhere you take them.
Cream together the butter and sugar.
Throw in the eggs and vanilla and whip until creamy.
Whip together the cream filling. Add a little milk if it’s too stiff…….but you don’t want it too soft either. Slather filling on one cookie and top with another.
Whoopie Pies
Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 2 large eggs
- 2 t vanilla
- 2 cups milk
- 4 cups flour
- 1 t baking powder
- 3 t baking soda
- 1 t salt
- 1 cup baking cocoa
Cream Filling
- 1 cup shortening
- 4 cups powdered sugar
- 2 cups marshmallow cream
- 3 T milk
- 1 t vanilla
Instructions
- Preheat oven to 350°.
- Cream together butter and sugar.
- Add in the eggs and milk. Whip until creamy.
- Mix flour, baking powder, baking soda and salt together in a bowl. Add to wet mixture and mix.
- Add in cocoa and beat until mixed together.
- Use greased cookie sheets, baking liners or parchment paper.
- Drop batter by teaspoonfuls onto prepared cooking sheet.
- Bake for 7 minutes. Cool on rack.
Cream Filling
- Mix all ingredients together with beaters. Add more milk if needed.
