Whoopie pies are one of those things that I forget how good they are until I make them again. And then I eat too many while exclaiming, “These are so good!” I guess they are called whoopie pies for a reason.

I was introduced to these while living in Pennsylvania many many years ago by my friend Gloria. This is her recipe she shared with me.

They are the BEST treat ever for any occasion and can be used for any holiday. Corinne makes these for Halloween by coloring the filling orange. Or you can go way fancy and decorate the tops.

These are easier than you would think and will IMPRESS everywhere you take them.

Cream together the butter and sugar.

Throw in the eggs and vanilla and whip until creamy.

Add the milk and mix well. The batter will be quite liquidy at this point.
Add in your dry ingredients and mix together.
If you have a thing for batter be sure to taste this one. It is YUMMY.
Drop by teaspoonfuls onto prepared baking sheet. Either grease it or use a baking mat or parchment paper.
They are PERFECT at exactly 7 minutes. They are soft and a little cakey, so be sure and use a spatula to transfer to cooling rack. Let them cool completely.

Whip together the cream filling. Add a little milk if it’s too stiff…….but you don’t want it too soft either. Slather filling on one cookie and top with another.

And that’s about how far I make it before taking a bite. I hope that’s the case with you too.
