apple cider vinegar

tomato paste

Roma tomatoes
**cut into chunks
2-3
cups
beef broth
**more broth will produce a less intense flavor
Instructions
Prepare the dried chilis and peppers by cutting off both ends, slitting down the sides and removing all the seeds. Set aside.
Heat oil in a heavy pot or skillet. Add the onions and garlic...cook and stir over medium-high heat for 5-6 minutes until softened.
Stir in the spices, apple cider vinegar and tomato paste. Bring to a boil and heat through.
Add the chilis/peppers and mix well.
Pour in the broth and add the fresh tomatoes. Bring to a boil.
Reduce heat...cover and simmer for 10 minutes.
Remove from heat. Strain through a colander. Salt and pepper to taste.
Store covered in the refrigerator.
