Birria Sauce (Consommé)

Ingredients
  

  • 4 dried Guajillo Peppers
  • 4 dried Ancho Chiles
  • 2 dried Chiles de Arbol **optional
  • 1 Tbsp oil
  • 1 white onion **cut into chunks
  • 8 garlic cloves
  • 2 tsp salt
  • 2 tsp oregano
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp cinnamon
  • ½ tsp peppercorns
  • ½ tsp whole cloves
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp tomato paste
  • 4 Roma tomatoes **cut into chunks
  • 2-3 cups beef broth **more broth will produce a less intense flavor

Instructions
 

  • Prepare the dried chilis and peppers by cutting off both ends, slitting down the sides and removing all the seeds. Set aside.
  • Heat oil in a heavy pot or skillet. Add the onions and garlic...cook and stir over medium-high heat for 5-6 minutes until softened.
  • Stir in the spices, apple cider vinegar and tomato paste. Bring to a boil and heat through.
  • Add the chilis/peppers and mix well.
  • Pour in the broth and add the fresh tomatoes. Bring to a boil.
    Reduce heat...cover and simmer for 10 minutes.
  • Remove from heat. Strain through a colander. Salt and pepper to taste.
  • Store covered in the refrigerator.
