Preheat oven to 350°.
Open the Brie and use a sharp knife to cut off as much of the brine as you desire. NOTE: if you choose to leave the brine on, use the knife to cut a criss-cross pattern on the top.
Roll out your thawed puff pastry to make it smooth. NOTE: It's best when still chilled to the touch and not completely thawed. You may need to pinch the seems of the dough together. Cut off the four corners, making 8 corners.
Place the Brie in the middle of the puff pastry.
Spread the jam on top of the Brie.
Make and egg wash by whisking the egg with 1 teaspoon of cold water.Brush around the edges of the puff pastry. Gently pull up each corner to the center of the Brie, pinching together in the center. Brush all over with egg wash. Use the cut off corners to create a decoration in the center, standing them up as triangles, pinching and twisting them in the center. Brush with egg wash.
Spray baking dish with baking spray. Bake for 30-35 minutes.
Allow to sit for 10 minutes before serving.
Serve with crackers and fruit.
