Chicken Gloria
This is an updated version of a Betty Crocker recipe and it is DELICIOUS! Tender chicken smothered with sauteed mushrooms, a rich creamy sauce and muenster cheese. Absolute Heaven! @mostdeliciouslife.com

3 large chicken breasts salt and pepper 1 cup flour 4 Tbsp butter, divided 1 Tbsp olive oil 1 medium onion, diced 2 tsp garlic, minced 8 ounces mushrooms, sliced Sauce 3 Tbsp butter 3 Tbsp flour 1 tsp salt ¼ tsp pepper 1½ cups chicken broth 1 Tbsp red wine vinegar 1 cup half and half 8 ounces Muenster cheese, sliced
Preheat oven to 350°.
Trim chicken of fat and sinews. Slice each breast in half lengthwise through thickest part of breast. Cut into serving size pieces.
Generously salt and pepper both sides of chicken pieces.
Heat 2T butter and olive oil in large skillet over medium-hi heat.
Dip chicken pieces into flour and shake off excess. Place in the heated skillet. Lightly brown, 3-4 minutes each side.
Place chicken in a 2 quart or 9x13" baking dish.
Melt remaining 2T of butter in skillet. Add mushrooms, onions and garlic. Cook for about 5 minutes, stirring occasionally.
Spoon mushroom mixture over chicken.
Sauce In the same skillet, melt butter over medium-hi heat. Whisk in flour, salt and pepper and cook for 1 minute while continuing to stir.
Whisk in chicken broth and red wine vinegar. Cook and stir until it begins to bubble and thicken.
Stir in half and half. Cook and stir until heated through. Add more salt and pepper if needed.
Pour sauce over chicken and mushrooms. Cover chicken with sliced muenster cheese.
Cover with foil and bake for 25 minutes.
Change oven to broil. Remove foil and place baking dish under burner until cheese starts to bubble. Watch carefully so that it doesn't burn.
Allow to sit 5 minutes before serving.
