Christmas Poke Cake

Ingredients
  

  • 1 box cake mix Chocolate cake mix **Make and bake according to box directions in a 9x13" pan. Cool completely.
  • 1 -3.9oz chocolate pudding, instant
  • 2 cups milk
  • ¼ tsp mint extract
  • 2 cups whipping cream + 2T cream cheese, ¼ cup powdered sugar, 1 tsp vanilla **can substitute cool whip
  • chocolate syrup
  • crushed peppermint candy

Instructions
 

  • Using the handle of a wooden spoon poke holes all over the cooled cake.
  • Whisk together the chocolate pudding mix, milk and mint extract.
  • Pour the pudding over the cake. Use a rubber spatula to spread and gently push into all the holes.
  • Whip the cream until stiff.
    Spread the whipped cream (or cool whip) over the cake.
  • Drizzle chocolate syrup over the whipped cream. Use a butter knife or a skewer to swirl through the chocolate.
  • Sprinkle the top with crushed candy cane.
    Keep refrigerated.
