2largetart apples, peeled and chopped**or 3 medium
2tsplemon juice
Canola or vegetable oil for frying
Glaze
3cupspowdered sugar
⅓cupmilk
1tsp vanilla
½tsplemon juice
Instructions
In a medium bowl mix all dry ingredients. Set aside.
In separate bowl mix the milk, applesauce and butter. Whisk in eggs and vanilla.Set aside.
Peel, core and chop apples. Add in lemon juice and mix well.
Add flour mixture and egg mixture to the apples. Mix until dry ingredients are incorporated. Don't overmix.
Heat about 2 inches of oil in a heavy skillet to about 375°. **You can test the heat by adding a teaspoon of batter to oil. If the oil is ready the batter will float and the oil will bubble around the batter. I generally turn the heat to medium-high after it is heated.
Scoop about ⅔ cup of batter onto a large spoon and carefully push into oil. Use the spoon to flatten a little. Allow to cook for about 2 minutes per side. Drain on a rack over paper towels.
Whisk the glaze together and place in a flat dish. After fritters have cooled for about 10 minutes, dip one side into glaze and place back onto rack until the glaze dries.
