Easy Apple Fritters

Ingredients
  

  • cups flour
  • cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • tsp cinnamon
  • ¼ tsp nutmeg
  • cup milk
  • cup applesauce
  • 2 Tbsp butter, softened
  • 2 eggs
  • 1 tsp vanilla
  • 2 large tart apples, peeled and chopped **or 3 medium
  • 2 tsp lemon juice
  • Canola or vegetable oil for frying

Glaze

  • 3 cups powdered sugar
  • cup milk
  • 1 tsp vanilla
  • ½ tsp lemon juice

Instructions
 

  • In a medium bowl mix all dry ingredients. Set aside.
  • In separate bowl mix the milk, applesauce and butter.
    Whisk in eggs and vanilla.
    Set aside.
  • Peel, core and chop apples. Add in lemon juice and mix well.
  • Add flour mixture and egg mixture to the apples. Mix until dry ingredients are incorporated. Don't overmix.
  • Heat about 2 inches of oil in a heavy skillet to about 375°.
    **You can test the heat by adding a teaspoon of batter to oil. If the oil is ready the batter will float and the oil will bubble around the batter. I generally turn the heat to medium-high after it is heated.
  • Scoop about ⅔ cup of batter onto a large spoon and carefully push into oil. Use the spoon to flatten a little. Allow to cook for about 2 minutes per side.
    Drain on a rack over paper towels.
  • Whisk the glaze together and place in a flat dish.
    After fritters have cooled for about 10 minutes, dip one side into glaze and place back onto rack until the glaze dries.
