Lemon Bars

Crust
- 1 cup flour
- ¼ cup powdered sugar
- ½ cup butter, softened
Filling
- 2 eggs
- 1 cup sugar
- ½ tsp baking powder
- ½ tsp salt
- 2 Tbsp lemon juice
Preheat oven to 350°.
Mix flour and powdered sugar together.
Add in softened butter and mix in with fork or hands until butter is fully incorporated.
Spray baking dish with cooking spray. Pour in crust mixture. Spread evenly and pat down.
Bake for 25 minutes.
While crust is baking whisk all filling ingredients together.
When crust is done, remove from oven and pour filling over the crust.
Bake for 20 minutes until filling is set.
Remove and cool on rack for 30 minutes before cutting.
Sprinkle with powdered sugar.
Cut into squares and serve.
