Lemon Bars

Equipment

  • 8 x 8 inch baking dish

Ingredients
  

Crust

  • 1 cup flour
  • ¼ cup powdered sugar
  • ½ cup butter, softened

Filling

  • 2 eggs
  • 1 cup sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 Tbsp lemon juice

Instructions
 

  • Preheat oven to 350°.
  • Mix flour and powdered sugar together.
  • Add in softened butter and mix in with fork or hands until butter is fully incorporated.
  • Spray baking dish with cooking spray. Pour in crust mixture. Spread evenly and pat down.
  • Bake for 25 minutes.
  • While crust is baking whisk all filling ingredients together.
  • When crust is done, remove from oven and pour filling over the crust.
  • Bake for 20 minutes until filling is set.
  • Remove and cool on rack for 30 minutes before cutting.
  • Sprinkle with powdered sugar.
  • Cut into squares and serve.
