Lemon Bars

Crust
- 1 cup flour
- ¼ cup powdered sugar
- ½ cup butter, softened
Filling
- 2 eggs
- 1 cup sugar
- ½ tsp baking powder
- ½ tsp salt
- 2 Tbsp lemon juice
- Preheat oven to 350°. 
- Mix flour and powdered sugar together. 
- Add in softened butter and mix in with fork or hands until butter is fully incorporated. 
- Spray baking dish with cooking spray. Pour in crust mixture. Spread evenly and pat down. 
- Bake for 25 minutes. 
- While crust is baking whisk all filling ingredients together. 
- When crust is done, remove from oven and pour filling over the crust.  
- Bake for 20 minutes until filling is set. 
- Remove and cool on rack for 30 minutes before cutting.  
- Sprinkle with powdered sugar. 
- Cut into squares and serve.
