Paradise Pudding

- 2 3.4 ounce Instant pudding packets, Coconut Cream flavored. **If Coconut Cream isn't available just use vanilla flavored and add 2 tsp of coconut extract.
- 2 20 ounce crushed pineapple, unsweetened
- ½ cup heavy cream
- ¾ cup coconut *unsweetened but sweetened is fine
- ¾ cup pecans, chopped
- 1 8 ounce cool whip, thawed
Open pudding packets into a large bowl. Add the undrained crushed pineapple. Use a whisk or mixing spoon to mix until the pudding is smooth.
Stir in the heavy cream and coconut extract.
Add the coconut, pecans and thawed cool whip. Refrigerate until well set, at least an hour. Stir before serving.
Top with additional cool whip, toasted coconut and pecans.
