Pork Fried Rice
This is good enough to be the main course! But is wonderful as a side too. @mostdelicouslife.com

- 3 Tbsp cooking oil
- 4 cups cooked rice, chilled
- 1 Tbsp minced garlic
- 1 bunch green onions **sliced
- 8 ounce water chestnuts, sliced **drain & chop
- 1 cup diced ham
- ½ pound bacon, cooked and crumbled
- 3 Tbsp soy sauce
- ½ tsp black pepper
- 3 eggs
- bean sprouts for topping
- Additional soy sauce as desired
Cook rice and place in the refrigerator to chill. Any white rice will work.
Heat 2 tablespoons of oil in a wok or large skillet. Add the garlic and green onions. Stir fry until onions begin to soften. Add the rice. Stir fry for 7-8 minutes. *This is what flavors the rice.
Stir in the ham, bacon & water chestnuts.
Create a spot in the center of the wok/skillet and add the 3rd Tablespoon of oil. Stir fry for another 2 minutes.
Stir in the soy sauce and black pepper.
Break the eggs into a bowl and lightly whisk.Move aside the rice in 2 or 3 places and pour in the eggs. Allow to sit for 30 seconds or so and then mix into the rice. Stir fry another couple of minutes so that the egg is well cooked. Add soy sauce to taste.Top with bean sprouts and additional bacon bits if desired.
