Apple Zucchini Muffins

- 2 cups shredded carrots
- 1 cup shredded zucchini
- 1 cup apple, peeled and chopped
- ¾ cup coconut
- ½ cup almonds, chopped
- 2 tsp orange peel
- 2 cups flour
- 1¼ cup sugar
- 1 Tbsp cinnamon
- 2 tsp baking soda
- ½ tsp salt
- 3 eggs
- ¾ cup applesauce
- 1 tsp vanilla
Preheat oven to 350°,
Prepare 18-24 muffin tins. Line with cupcake papers or spray with cooking spray.
In large bowl mix together the carrots, zucchini, apple, coconut, almonds and orange peel. Set aside.
In separate bowl mix together flour, sugar, cinnamon, baking soda and salt.
In third bowl whisk together the eggs, applesauce and vanilla. Stir into dry ingredients until JUST MIXED.
Fold into carrot/apple mixture, until JUST MIXED.
Spoon into muffin tins, about ⅔ full.
Bake for 22-25 minutes.
Remove to cooling rack and allow muffins to cool for 5 minutes.
Remove muffins to cooling rack.
