Black Bean Salsa
A protein packed "dip" with tortilla chips that is delicious. Perfect for a lunch, or snack.

- 1 can black beans drained and rinsed
- 1 can black eyed peas drained and rinsed
- 1 can shoepeg corn
- ¼ cup red onion, chopped or more to taste
- ½ cup cilantro, chopped
- ¼ cup Italian dressing
- 1 avocado, chopped
- 1 teaspoon lime juice, optional or 1 packet of True Lime
- Tortilla chips
In a medium sized mixing bowl toss together both beans, corn, onion and cilantro.
Drizzle the dressing over the bean mix. Add the lime if you choose. Fold and stir till combined.
Gently fold in the chopped avocado.
Serve with tortilla chips.
