Ingredients

bacon strips

frozen hashbrowns

cup
chopped green pepper
½
cup
onions
1
teaspoon
salt
¼
teaspoon
pepper

eggs
1 ½
cups
grated cheddar cheese
Instructions
Cut bacon strips into ½ inch pieces and cook in skillet until crispy.
Remove from pan and drain on paper towels.
Pour as much bacon grease as you desire into large skillet or an electric skillet.
Cook and stir green pepper and onions until softened.
Add hashbrowns and cook until crispy on edges. Salt and pepper.
Using a large spoon, make 6 wells in the hashbrowns.
Break each egg into the well.
Cover with a lid and allow eggs to cook until desired doneness.
Sprinkle with grated cheese and bacon bits. Cover until cheese is melted.
Salt and pepper to taste.
