Breakfast Skillet

A tasty breakfast that I serve for dinner!

Ingredients
  

  • 6-12 bacon strips go for more if you want!
  • 1 30 ounce frozen hashbrowns
  • 1 cup chopped green pepper
  • ½ cup onions
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 6-7 large eggs
  • 1 ½ cups grated cheddar cheese

Instructions
 

  • Cut bacon strips into ½ inch pieces and cook in skillet until crispy.
  • Remove from pan and drain on paper towels.
  • Pour as much bacon grease as you desire into large skillet or an electric skillet.
  • Cook and stir green pepper and onions until softened.
  • Add hashbrowns and cook until crispy on edges. Salt and pepper.
  • Using a large spoon, make 6 wells in the hashbrowns.
  • Break each egg into the well.
  • Cover with a lid and allow eggs to cook until desired doneness.
  • Sprinkle with grated cheese and bacon bits. Cover until cheese is melted.
  • Salt and pepper to taste.
