Chicken Nacho Casserole

These nachos are so delicious and can be served as a casserole or a party dip. Spoon over tortilla chips and top with avocado, taco sauce, sour cream and cilantro. SO GOOD! @mostdeliciouslife.com

Ingredients
  

  • 3 cups diced rotisserie chicken ***or just cooked chicken
  • 2 cups tomatoes, seeded and chopped ***about 4 romas
  • 1 15-oz can, black beans, drained and rinsed
  • 1 can corn kernels, drained
  • ¾ cup salsa or picante
  • 2 cloves garlic, pressed
  • 1 tsp chili powder
  • 1 tsp cumin
  • ¼-½ tsp cayenne
  • 1 tsp salt
  • 1 15-ounce refried beans
  • ½ cup salsa or picante
  • 3 cups cheddar or monterey jack cheese, shredded *or favorite cheese
  • tortilla chips

Toppings

  • avocados, choppped
  • cilantro
  • sour cream
  • taco sauce

Instructions
 

  • Preheat oven to 400°.
  • Mix chicken, tomatoes, black beans, corn, ¾ salsa, garlic and seasonings together.
  • Spoon half of the mixture into a 2 quart baking dish (or 9x13 inch pan).
  • Mix refried beans with ½ cup salsa. Drop by spoonfuls over chicken & veggies and spread carefully.
  • Top with half of the cheese.
  • Spoon on remaining chicken filling and top with remaining cheese.
  • Make a rim of chips around the edge of the baking dish with the chips sticking up.
  • Bake 30 minutes.
  • Serve with sour cream, taco sauce, chopped avocados and cilantro.
